Co-Founder, Wahoo's Fish Taco
As the eldest of the three founding brothers Ed and Mingo Lee, Wing Lam co- founded Wahoo’s Fish Taco in 1988 and has nearly 40 years of experience in the restaurant industry. Wahoo’s Fish Taco, headquartered in Orange County, California, is celebrating its 30th anniversary this year. Lam, a Chinese immigrant, spent his childhood in Sao Paulo, Brazil, before he moved to Costa Mesa. In 1970, Lam’s father, Cheong Lee, opened a Chinese restaurant called Shanghai Pine Garden, which the family still owns, on Balboa Island. Wing and his brothers grew up speaking conversational Portuguese, Chinese, French, and Spanish fluent, but learned English by listening to customers in their family restaurant.
Lam, known today as the “ultimate wing man,” restauranteur, surfer, speaker and philanthropist, graduated from Costa Mesa’s Estancia High School. Even when he had his first taco stand, Lam’s water polo coach, John Carpenter, inspired him to give back to the school. He then spread his generosity to the baseball team at Saddleback College and the water polo program at UC Irvine. Lam eventually left Orange County and graduated with a degree in finance from San Diego State.
Wing and his brothers road tripped to Mexico, and they loved the fish tacos there. Their vision was to create a fast-casual Mexican restaurant with a streamlined menu, inspired by their Brazilian-Chinese heritage. The brothers opened their first Wahoo's in 1988 in Costa Mesa. Now there are more than 60 locations, mostly in Southern California, but also in Las Vegas, Denver, Philadelphia, Honolulu and Tokyo.
Wing, often the face of Wahoo's, has been featured in a national Merrill Lynch commercial and two Food Network shows, "Unwrapped" and "Beach Eats USA." In addition, Wing actively supports many national and local community-based events and serves as a board member of various non-profit organizations, among many includes Share Our Strength, Juvenile Diabetic Research Foundation and Surfrider Foundation.
Wing makes repeat appearances as the guest speaker/panel at events such as the IEG Conferences and has been featured by nation’s top campuses like Yale, UCLA and USC MBA Program. Lam is also active in the Asian American Journalists Association. In 2018, he received the 2018 Corporate Creativity and Innovation Leadership Award from the Child Creativity Lab and the 2018 IMPACT Award from the International Executive Council. Over the years, Lam, his brothers, and Wahoo’s Fish Taco have been named one of the 500 Most Influential by the Orange County Business Journal, Best OC Brand by OC Weekly, the Golden Foodie Award and has countless awards for philanthropy and business achievements.

Founder's District is pleased to announce the Fall 2016 Communication And Leadership Award recipient, Maja Mataric, PhD.
Affiliated with the USC Robotics Research Lab, Dr. Mataric pioneered “socially assistive robotics” a decade ago. She taught them to play with autistic children and remind stroke patients to exercise. Maja Mataric decided to use her knowledge in the most worthwhile manner - to help others face everyday difficulties.
One of her goals is to inspire young girls to join the tech world. Living in Los Angeles, she recently judged the Next MacGyver contest for a TV show proposal starring female engineers.
Her area of development is fascinating as it relates to communication. She has been featured in The New Yorker and Popular Science magazines, and received an award from the LA Times in 2010. She volunteers her time with STEM education, and received the Presidential Award for Excellence in Science, Mathematics, and Engineering Mentoring.
2016-17 Founder’s District Alignment Notes 2016-04-23
Last fall this body approved the formation of District 100 and Founder’s District, along with the creation of ten divisions, A through I.
Since the fall conference…
With this much change it is impossible to finalize next year’s alignment in April. A working draft alignment has been prepared to facilitate planning and discussion. Next year’s actual alignment will be finalized sometime between June 20th and July 15th.
The border between Founder's District and District 100 is:
From the intersection of the 605 Freeway (San Gabriel River Valley Freeway) with E Wardlow Rd, then east to Ball Rd. Continue on Ball Rd to Taft Ave., and then proceed east on Taft Ave to N Tustin St.. Proceed North on N Tustin just far enough to resume an eastward direction along E Taft Ave to Cannon St. Then extend a straight line due east to the Orange County border. Clubs with addresses on Ball, Wardlow, or Taft will be part of District 100.
Divisions B, D, E, and H are in the north
Divisions A, C. F. G, I, and J are in the South. All divisions have 22-24 clubs

In order for us to utilize our time more effectively at the Business Meeting on Saturday, April 30, we have put together some of the routine items discussed into a Consent Agenda. These routine items are packaged and accepted as a group. In this package are items that do not need any discussion or a vote. Any District Officer can request the removal of an item from the Consent Agenda if they feel that we should vote on it independently. However, the idea here is to be able to focus on items that need more attention and limit the time spent on the items that are general in nature.
Please take a few moments to review the documents. If you have any concerns, please send your request in writing to Linda Denton at This email address is being protected from spambots. You need JavaScript enabled to view it., Founder’s District Administration Manager, prior to our Business Meeting.
The Items that are included in the Consent Agenda are as follows:
Sharon Ellis joined Habitat for Humanity of Orange County as Executive Director in 2005. She is responsible for directing activities of both employees and thousands of volunteers as they help to build and finance affordable homes in Orange County.
Sharon’s prior experience includes more than 20 years in the field of education as a high school teacher, principal and special assignment administrator. Her community involvement includes serving as a Community Services Commissioner for the city of Irvine, Director of Community Relations at Irvine Medical Center, board of governors at the OC Housing Trust and work on several other institutional committees. She holds a BS in Education from Drexel University, a Masters in Education Administration, and additional credentials.
In October, 2016, Ms. Ellis will lead a team from Habitat Orange County to join other Habitat groups in the “Big Build” in Vietnam. Hundreds of people will gather from around the world for a week of building homes outside of Hanoi.
We build new clubs and support all clubs in achieving excellence.
